Well, my kids will kick and scream for these cupcakes, and it is often requested on their birthdays. I’d give them a try…see if you agree!
|2 Sticks butter||3 C. flour|
|2 C. sugar||1tsp. baking powder|
|4 lg. eggs||½ tsp. salt|
|1 ½ tsp. vanilla||1 C. milk|
Preheat oven to 350 ºF. Beat at medium speed butter and sugar until pale and fluffy. Beat in eggs one at a time and add vanilla. Reduce speed, add dry ingredients and milk. Spoon into cup cake holders, or cupcake pan. Bake.
|1-8oz. cream cheese||Flakey coconut|
|2 C. confectioners sugar|
|1 stick butter|
|2 tsp. vanilla|
Beat cream cheese with one stick of butter, sugar and vanilla until fluffy. Ice cooled cupcakes, sprinkle flakey coconut on top.
