Eggplant are a wonderful member of the nightshade family (along with peppers and tomatoes). Though we all consider eggplant to be a veg, it's actually a fruit. Available in many shapes and sizes, the purple color is almost always common to the veg. Some varieties have light purple lines drawn on the skin, while others are completely purple. It happens to be one of my favorite summer time staples. I love this veg (or fruit) grilled, sauteed, or baked and made in to the babaganoush. It's a delight.
