Kale is a pre-historic looking vegetable that is actually a member of the cabbage family.  Though it's been around since the dawn of time, Kale is a recently popular item by health conscious people since it's loaded in vitamins and minerals.  It's quite a hearty vegetable to grow, as it withstands the freezing cold winters and tends to do ok in hot climates too.  It's a delicious green sauteed, in green smoothies, or baked into the popular kale chips.  The flavor of this green leafy veg is on the bitter side, though is often toned down with a friendly drizzle of olive oil.
