Spinach is the food of champions, and yes, Popeye too.  It was positioned back then as the food to build muscles and decades later, I think we've all finally accepted it.  I love spinach.  It's a great ingredient to eat raw in salads, or to gently saute together with mushrooms.  I love making a base of pesto from it, or adding it into a green smoothy.
