This is a quick update on an old idea. Pressed for time, or wanting to get a meal in the oven? Never forget about the power of the potato. This Herb roasted Potatoes recipe took me about 5 minutes to prepare.
- Take your potato and simply cut it in 4’s, length wise. (Assemble the cut pieces in a metal bowl for a quick combine before you throw it on the baking sheet.)
- Shave a clove or two of garlic, add some herbs such as oregano and sage, salt and pepper and finalize your preparation with some evoo (Extra Virgin Olive Oil).
- Take your hands and toss this mixture together, then lay out on a baking dish and bake until golden and crispy. The baking part takes the longest, about 30 minutes on a higher, broil temperature. It’s just a new idea on something that’s been around for hundreds of years!
