Quick Herbed Potatoes: cir. 2000
This is a quick update on an old idea. If you’re pressed for time, or wanting to get a meal in the oven, on the table asap, never forget about the power of the potato. This recipe took me about 5 minutes to prepare. Take your potato and simply cut it in 4’s, length wise. ( Assemble the cut pieces in a metal bowl for a quick combine before you throw it on the baking sheet.) Shave a clove or two of garlic, add some herbs such as oregano and sage, salt and pepper and finalize your preparation with some evoo. Take your hands and toss this mixture together, then lay out on a baking dish and bake until golden and crispy. The baking part takes the longest, about 30 minutes on a higher, broil temperature. It’s just a new idea on something that’s been around for hundreds of years!
